Recipe for Week of May

Gazpacho Soup (Good
recipe for summer gleaning or gardening)
(Makes 6 servings)
Ingredients:
- 2 cups chopped fresh tomatoes or canned diced tomatoes (low sodium)
- 1 green bell pepper
- 1 red bell pepper (or another green one)
- 1 cucumber
- 1/4 cup olive oil (or canola oil)
- 1/4 cup fresh cilantro (optional)
- 1 clove garlic (optional or substitute 1/8 tsp garlic powder;double it
if you're a garlic lover)
- dash of pepper (more if you like)
Preparation Instructions:
Mix all ingredients together in a blender
until smooth.
Top with sliced cucumbers, onions or chopped green
pepper.
Refrigerate and serve cold with a slice of
whole grain bread

serving: 110 calories; 1 gm protein; 7 gm carbohydrate; 2 gm fiber; 9 gm fat;
0 mg cholesterol; 10 mg sodium.
