Recipe for Week of September 3, 2001

Red Beans and Rice (Makes 6 servings:)

Ingredients:

  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1 clove garlic, chopped
  • 1 cup red kidney beans
  • 2 cup cooled rice
  • 1 can tomatoes
  • 1/2 pound lean ground beef

Preparation Instructions:

Brown ground beef, add onions and bell pepper cook until clear. Drain. Add the rest of the ingredients and cook over low heat until most of the liquid is gone.
