Bologna Potato Soup
(Makes 8 -10 servings)
Prep Time: approx. 20 Minutes.
Cook Time: approx. 1 Hour 10 Minutes. Ingredients:
- 1 onion, peeled
- 2 (20 ounce) cans cut green beans
- 1-1/2 pounds low fat bologna cut into
- small pieces
- 8 potatoes, peeled and cubed
- 16 cups water
- ground black pepper to taste
- salt to taste if desired
- 1/2 cup cornstarch
- 1/2 cup cold water
Preparation Instructions:
1. Place water in a 6-quart (or larger) pot. Bring to a boil. Put
chopped onion and bologna into the water and boil for 30 minutes, adding more water as needed.
2. Add potatoes and cook until tender.
3. Add green beans.
4. Whisk the cornstarch and cold water together and add to pot. Cook until thickened.
