Recipe for Week of

Cauliflower Italiano (Makes 6
servings)
Ingredients:
- 1 tbs chopped onion
- 2 tbs chopped green pepper
- 1 small garlic clove
- 1 cup crushed tomatoes
- 2 tbs lowfat Italian dressing
- 3 cups chopped cauliflower
Preparation Instructions:
Stir fry onion and garlic in a skillet until tender; add cauliflower
and 1/4 cup water. Cook in covered skillet over low heat for 10
minutes. Add green pepper and cook until tender (about 5 minutes).
Stir in remaining ingredients and heat thoroughly.
