Recipe for Week of
October 31, 2002
Italian Beef and Pasta (Makes 4
servings)
Ingredients:
- 1 ½ c pasta
- 1 pound lean ground beef
- 2 cloves garlic
- 1 medium white onion, chopped
- ¼ tsp salt
- 1/8 tsp pepper
- 3 cups sliced mushrooms
- 1 cup sliced canned tomatoes
- ¼ c fat-free Italian dressing, prepared
- 1 T grated parmesan cheese
- 1/2 T dried parsley
Preparation Instructions:
- Cook pasta according to package directions. Keep warm.
- In large nonstick skillet, brown ground beef, onion, and garlic.
Season with salt and pepper. Remove from pan with slotted spoon. Keep
warm.
- In same skillet, add mushrooms; stir-fry 3 minutes or until tender.
Return beef to skillet and add tomatoes and dressing; heat through.
- Spoon beef mixture over hot pasta; sprinkle with cheese and parsley.
