Recipe for Week of October 31, 2002

Italian Beef and Pasta (Makes 4 servings)

Ingredients:

  • 1 ½ c pasta
  • 1 pound lean ground beef
  • 2 cloves garlic
  • 1 medium white onion, chopped
  • ¼ tsp salt
  • 1/8 tsp pepper
  • 3 cups sliced mushrooms
  • 1 cup sliced canned tomatoes
  • ¼ c fat-free Italian dressing, prepared
  • 1 T grated parmesan cheese
  • 1/2 T dried parsley

Preparation Instructions:

  1. Cook pasta according to package directions. Keep warm.
  2. In large nonstick skillet, brown ground beef, onion, and garlic. Season with salt and pepper. Remove from pan with slotted spoon. Keep warm.
  3. In same skillet, add mushrooms; stir-fry 3 minutes or until tender. Return beef to skillet and add tomatoes and dressing; heat through.
  4. Spoon beef mixture over hot pasta; sprinkle with cheese and parsley.
