Recipe for Week of March 23, 2003
Antipasto Style Pasta (Makes 6 to 8
servings)
Ingredients:
- 2 cups pepperoni, sliced and quartered*
- 1 can (14.5 oz.) Diced Tomatoes
- 1 1/2 cups each: finely chopped green bell pepper and
shredded mozzarella cheese
- 1 can (2.25 oz.) sliced ripe olives, drained
- 2 garlic cloves, minced
- Salt and ground black pepper, to taste
- 1 pound rotini pasta
Steps to prepare:
- Combine and mix pepperoni, tomatoes, green pepper, cheese, olives, garlic,
salt and pepper in a large serving bowl; set aside.
- Cook pasta according to package directions; drain. Do not rinse.
- Add hot pasta to tomato mixture in bowl; toss to
coat. Serve immediately
*Additional Notes*
* 2 cups of cooked and cubed meat or fish (i.e. ham, chicken or
tuna) may be substituted for the pepperoni
