Recipe for Week of April 7, 2003

Easter Egg Sandwiches

Ingredients
6 hard-cooked eggs, peeled and chopped
1/2 cup finely chopped celery
1/4 cup chopped green pepper (optional)
2 tablespoons finely chopped green onion
1/3 cup lowfat mayonnaise
Dash of salt and pepper if desired

Instructions
1.  Mix all ingredients in a bowl.
2. 
Spread on whole grain bread (look on the label for whole grain as the first 
     ingredient);makes 6 sandwiches.
