Holiday Cranberry Nut Bread (Makes 12
servings)
Ingredients:
-
2 cups all-purpose flour
-
3/4 cup white sugar
-
3/4 teaspoon salt
-
1 1/2 teaspoons baking powder
-
1/2 teaspoon baking soda
-
1 cup chopped cranberries
-
1/2 cup chopped nuts
-
1 tablespoon orange peel
-
1 egg
-
2 tablespoons vegetable oil
-
3/4 cup orange juice
Preparation Instructions:
- Preheat oven to 350 degrees
- Grease one 9x5 inch loaf pan
- Combine flour, sugar, salt, baking powder and baking soda
- Add cranberries and chopped nuts
- Stir to coat with flour
- Combine egg, oil, orange juice and grated orange peel
- Add egg mixture to flour mixture
- Stir until just combined
- Spoon the batter into the prepared pan
- Bake at 350 for 50 minutes
- Let bread sit for 10 minutes
- Remove bread from pan and allow to completely cool before slicing
