Recipe for Week of December 15, 2003

Holiday Cranberry Nut Bread (Makes 12 servings)

Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup white sugar
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 cup chopped cranberries
  • 1/2 cup chopped nuts
  • 1 tablespoon orange peel
  • 1 egg
  • 2 tablespoons vegetable oil
  • 3/4 cup orange juice

Preparation Instructions:

  1. Preheat oven to 350 degrees
  2. Grease one 9x5 inch loaf pan
  3. Combine flour, sugar, salt, baking powder and baking soda
  4. Add cranberries and chopped nuts
  5. Stir to coat with flour
  6. Combine egg, oil, orange juice and grated orange peel
  7. Add egg mixture to flour mixture
  8. Stir until just combined
  9. Spoon the batter into the prepared pan
  10. Bake at 350 for 50 minutes
  11. Let bread sit for 10 minutes
  12. Remove bread from pan and allow to completely cool before slicing
