Recipe for Week of 1/12/04

Glazed Carrots (Makes 12 servings)

Ingredients:

  • 3 lb Carrots, cut in 2 inch long, 1/2 inch thick sticks
  • 2 tablespoons butter
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 2 tablespoons grated ginger (if desired)

Preparation Instructions:

  1. Place carrots in saucepan with water to cover
  2. Bring to a boil
  3. Reduce heat and simmer 2 minutes or until tender
  4. Drain in colander
  5. Rinse under running cold water until cool, allow to drain
  6. Melt butter in same saucepan over low heat
  7. Add carrots, honey, salt and ginger
  8. Cook 2 minutes, stirring a few times, until coated and hot
