Recipe for Week of

Glazed Carrots (Makes 12
servings)
Ingredients:
- 3 lb Carrots, cut in 2 inch long, 1/2 inch thick sticks
- 2 tablespoons butter
- 1 tablespoon honey
- 1/2 teaspoon salt
- 2 tablespoons grated ginger (if desired)
Preparation Instructions:
- Place carrots in saucepan with water to cover
- Bring to a boil
- Reduce heat and simmer 2 minutes or until tender
- Drain in colander
- Rinse under running cold water until cool, allow to drain
- Melt butter in same saucepan over low heat
- Add carrots, honey, salt and ginger
- Cook 2 minutes, stirring a few times, until coated and hot
