Recipe for Week of 01/19/04/

Muffins (Makes 20 servings)

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 3 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 Tbsp. sugar
  • 1 cup low-fat milk
  • 1 egg
  • 1 cup raisins or chopped berries

Preparation Instructions:

  1. Preheat oven to 350 degrees F.
  2. Mix flour, baking powder, salt and sugar together
  3. Beat in the milk and egg until smooth
  4. Mix in the fruit
  5. Place in buttered and floured muffin tins
  6. Bake for 25 minutes
