Recipe for Week of 04/20/04

Best Black Bean Soup (Makes 6 Servings)

Ingredients:

  • 2 tbsp. vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 1 tsp. cumin
  • 3 tsp. chili powder
  • 1/2 tsp. oregano (optional)
  • 3 cans (15 oz.) black beans
  • black pepper to taste

Preparation Instructions:

  1. Pour oil into large bowl over medium heat.
  2. Cook onion in hot oil for five minutes.
  3. Stir in garlic, cumin, chili powder and oregano.
  4. Puree one can of beans
  5. Add pureed beans to pot.
  6. Add remaining cans of beans (draining liquid from one)
  7. Reduce heat and simmer for 15 minutes.
  8. Stir often
  9. Add black pepper to taste
  10. Garnish with salsa, shredded cheese or fresh herbs as desired
