Cool Lime Vegetables
-
2 cups zucchini, sliced
-
1 cup fresh mushrooms, sliced
-
1 cup fresh or frozen corn kernels
-
1 cup chopped tomatoes
-
2 tablespoon fresh lime juice
-
1-1/2 teaspoons extra virgin olive oil
-
1/2 teaspoon dried oregano leaves
-
Steam sliced vegetables, except tomatoes, in a small
amount of water until just tender, about 5 minutes. Drain and place
in serving bowl to cool.

Mix lime juice and
extra virgin olive oil. Whisk in oregano.
-
Pour lime juice-oil
mixture over cool vegetables. Add tomatoes. Mix well.
Yields 5 servings.
